Gingerbread Men

William Shakespeare: “And I had but one penny in the world. Thou should’st have it to buy gingerbread.

These won’t be anything like the ordinary ginger bread biscuits – hard! They’re so soft and Lush

Ingredients:

  • 2 ½ cups Flour
  • ½ cups soft butter
  • ½ cup molasses
  • ½ cup caster sugar
  • ¼ cup water
  • 1 tsp ground ginger
  • 1 tsp vanilla extract
  • ½ tsp salt
  • ½ tsp baking soda
  • ½ tsp ground cinnamon
  • ¼ tsp fresh ground nutmeg
  • ¼ tsp ground cloves
  • You’ll also need; two bowls, cling film or tin foil, gingerbread men cutter and parchment-lined baking sheet.

Add icing on the top if you like or if the kids like. Add drop of food colouring too, to make the men look friendlier.

Method

1.       In a bowl, sift together all the dry ingredients except for the sugar.

2.       In another bowl, cream together the butter and sugar until light and frothy.

3.       Stir in the wet ingredients into the butter mixture.

4.       Fold in all the dry ingredients with the wet mixture, until a smooth dough forms.

5.       Cover the dough with cling film or tin foil and refrigerate for 3 hours.

6.       On a floured surface, roll out the dough to about 1/8 inch thickness.

7.       Place cookies onto the baking sheet.

8.       Bake for 10 minutes or until lightly browned and quite firm at the edges.

9.       Let them cool before decorating with icing sugar.

Chocolate Chip Bingo Cookies

Don’t expect these to stay around too long; they’re classic yet so delicious!!

There’s no doubt in why these cookies are so popular!

Amazing Chocolate chip cookies

Ingredients:

  • ¾ cup granulated sugar
  • 1 cup brown soft sugar
  • 1 cup soft butter
  • 2 Beaten eggs
  • 3 cups plain flour
  • 3 cups Chocolate chips ( of your choice- white/milk/dark chocolate)
  • 1 tbsp vanilla
  • ¾ tsp baking soda
  • ¾ tsp Salt

If you desire, then add 1 cup of chopped nuts of your choice!

Method

  1. Preheat your oven to 375°F (190°C)
  2. In a bowl cream together the butter and the sugars and beat until light and fluffy.
  3. Stir in the eggs well and then the vanilla.
  4. Add the chocolate chips and nuts if you’re using them, into the mixture.
  5. In a separate bowl sift all the rest of the ingredients.
  6. Add the dry ingredients into the creamy mixture, stirring well.
  7. Line the tray with either parchment or wax paper.
  8. Drop a tablespoon of the dough onto the sheet making sure you leave about 2 inches away from each other.
  9. Bake for 10-12 minutes or until light golden brown.
  10. Remove from the oven and cool on wire racks.

I don’t think anyone could stop you from enjoying these cookies, they’re just fabulous!

Peanut Butter Cookies

Smarties Cookies

You’re never too old to eat these; they are way too lush to resist them!

I love smarties and cookies, so these cookies are simply amazing!

Scrumchess colourful cookies

Ingredients:

  • 1 cup soft butter
  • 1 cup soft brown sugar
  • 1 egg
  • 2 cups plain flour
  • 1 tsp baking soda
  • ¼ tsp salt
  • 1 tsp Vanilla extract
  • 3 Tubes of smarties

If you like you could even add a tbsp of golden syrup to make the cookies gooier! Yummy!

Method:

  1. Preheat your oven to 356°F (180°C)
  2. Beat butter and sugar together until light and fluffy- if you’ve decided to add the golden syrup then mix that in now.
  3. Add egg and stir well, then stir in the vanilla.
  4. Add half of the flour, baking soda and salt and stir well.
  5. Add the smarties stirring well.
  6. Add the rest of the flour work the dough together with your fingers- this will be much easier.
  7. Use a tablespoon to drop big blobs of the dough onto greased cookie sheet/parchment paper or anything else suitable.
  8. Bake in the oven for about ten minutes or until Lightly browned.
  9. Remove and cool on rack.

Oatmeal Raisin Cookies

These ingredients should make about 2 dozen cookies; it really depends on how big you decide your cookies to be.
